Lebbene is an Israeli cheese produced from sheep's milk and shaped into small, little balls. It is unbelievably soft and stored in olive oil. The cheese is enjoyed throughout the Middle East where it is known by different names such as Lebney in Syria, Labaneh in Jordan and Gibne in the Arabian Peninsula. This cheese can also be made from goat's milk and its consistency is almost liquidly with a fat content of 45%.
