Sardo is an Argentinean hard cheese made from cow's milk. It should not be confused with Italian Pecorino Sardo (Fiore Sardo), sheep's milk cheese from Italy. For this purpose, Sardo is sometimes also referred to as Argentine Sardo or Sardo Argentino.

This cheese is sharp, salty in flavour and, when young, is smooth in texture. As it ripens, Sardo turns dry and hard. It is produced in wheels that are about 6 lbs. in weight. This whitish-yellow grating cheese goes well with pasta dishes, soups or steamed vegetables.
