Colony cheese or queijo de colônia is a Brazilian cheese produced in the highlands of the Brazilian state of Rio Grande do Sul. It is made up of cow's milk, salt and lactic ferments. The cheese has a soft, slightly spicy paste enveloped by a solid yellow crust. The exterior becomes bigger and harder as the cheese ages, making the complex flavour of the cheese becomes more spicy and striking. Colony cheese pairs well with red wines as well taste delicious in pizzas, lasagnas and pasta.
