Serra da Estrela (Queijo Serra da Estrela) DOP is the king of Portuguese cheese and has been made for centuries by shepherds in the mountains of Serra da Estrela. It is a sheep's milk cheese prepared using Bordalaira ewe's milk and thistle rennet. While making this hand-made cheese, curds are broken up by hand.
Serra da Estrela is semi-soft, spreadable cheese with a rich, intense flavour. It is available in two types: one is buttery and rich, and another is more mature, firm, and pungent.
