Garrotxa
Made in Spain, this nearly extinct type of cheese was revived back in 1981 and since then has gained popularity among the artisanal cheesemakers. Garrotxa is a semi-firm kind of cheese, aged for about 75 days and is covered with a velvety grey mould that gives off a woody aroma. It is delicious, tangy and always made with pasteurised milk. This cheese works well with bread, nuts and wine like Chardonnay and Pinot Gris.
Goat Milk Feta
Goat Milk Feta is an Australian cheese made with 100% goat’s milk marinated in oil and a selection of herbs along with whey brine. Because of its acidic nature, the cheese works well with some amazing Mediterranean dishes like salads, tart fillings and frittatas. Goat Milk Feta stays fresh for nearly 6 months.
Fresh Chevre
The creamy, soft and pasteurised goat’s milk cheese, made in the United States of America is called Fresh Chevre. It is mild, fresh, handmade and comes in a variety of flavours depending on the ingredients used while preparing the cheese, like, pink peppercorn as well as black peppercorn and garlic. It tastes decadent with sparkling wine.
Ticklemore
Ticklemore is an English cheese made in England, Great Britain. Visually, this cheese is snowy white and semi-hard, with a crumbly, soft texture and a lemony taste. It takes the shape of the mould from which the curd is drained, creating a saucer shape. The floral aroma and flavour pattern can be popular to enjoy during the fresh spring season.
