Lancashire cheese has been made in Lancashire since the 13th century. Farmers' wives made the cheese from the surplus milk. In 1890, a Lancashire County Council employee named Joseph Gornall advised on production methods and created a formal recipe for Lancashire cheese. This method is still used today.

Lancashire cheese comes in three types - Creamy Lancashire, Tasty Lancashire and Crumbly Lancashire. The Creamy Lancashire is a very popular cheese that is aged for 4 to 12 weeks. In fact, in some areas, it is called toastie. It goes well with Welsh rarebits, sandwiches and pasta.
