Mihalic Peynir is a Turkish vegetarian, hard cheese made from sheep's milk. It originated 200 years ago during the Ottoman era in the northwestern city of Bursa. Made from unpasteurised milk, Mihalic Peynir is stored in brine. First the curds are placed in hot water and stirred. Later they are left in the water to harden and acquire a firm, slightly elastic texture. And finally the cheese is salted and dried. It is sold in various shapes and sizes, generally in balls or slices. It is a great substitute to Parmesan cheese. Mihalic Peynir tastes delectable when grated over salads or in baked dishes.
