Coming from the Spanish region of Fornells de la Selva in Gironès, Selva is a soft, supple, salty cheese made ​​from pasteurised cow's milk. It has a straw yellow exterior and creamy beige, soft pate. The crust is smooth, hard with flavours reminding of yogurt – slightly bitter and salty. The aroma is very pleasant thanks to the use of full cream. It is matured for one month before being introduced to cheese connoisseurs.
