Goat Nevat or simply Nevat (Nevat means snowed in Catalan) is produced in the Barcelona region of Spain. It is a soft-ripened cheese made by Mr. Joseph Cuixart using pasteurised goat’s milk. It is treated with a penicillium mould, which forms a bloomy white rind that looks like a blanket of snow. The ageing period is about 60-90 days, and a fully matured cheese develops a soft, delicate texture and sweet flavour.
This unique, soft-ripened goat's milk cheese was created by Josep of Can Pujol. He makes the cheese using only his own and neighboring herders’ fresh same-day milk in the heart of the Barcelones Mountains and encloses it in a cheese cloth to form an attractive servilleta (napkin) shape. Treated with a penicillium mold, Nevat forms a beautiful bloomy white rind that looks like a blanket of snow (Nevat means snowed in Catalan). As it matures, its semisoft texture softens and a delicate, sweet flavor develops. Preorder only.
