La Bonaparte is a soft, bloomy rind cheese made in the style of Brie/Camembert from pasteurized cow’s milk and cream. It is dedicated to Emperor Bonaparte, who was known for his rigour, strictness and perfection. This double cream cheese has an incredible supple ivory paste covered by a smooth rind. It blends well with various fruit, sugar, and nut-based recipes as well as red Burgundy (red) or Blonde Ale. The cheese has been a 1st prize winner at the 2009 American Cheese Society contest.
