Le St-Raymond is a soft cheese made from pasteurized milk. It has an orangey-red, barely moist rind covering an unctuous and supple ivory body with a hazelnut mouthfeel. The flavours are lead by a woody, fruity touch that lingers pleasantly on the palate.

The cheese is named after the city of Saint-Raymond, home to some of the most the passionate cheese makers, including La Maison Alexis de Portneuf.
