Operetta is a crottin-style goat milk cheese with flavours that evolve as it ages. When young, the cheese has a white mould rind, beneath which is a light paste with a dense, pleasant lactic flavour. Upon further ripening, blue moulds start appearing and the paste becomes soft, producing stronger flavours. When Operetta is fully aged, its rind will be greyish blue on surface, and feature a dryer, dense, paste with more complex flavours.
