Gubbeen is a semi-soft, surface-ripened cow's milk cheese with a pinkish-white rind. It is produced by Tom and Giana Ferguson at their Gubbeen Farmhouse in Schull, Country Cork, Ireland.

Made using cow’s milk, the cheese develops deeper flavours as it matures. A young Gubbeen reveals a real buttery, milky taste with scents of meadow flowers and hazelnuts. As it matures, the cheese develops notes of mushrooms and nuts. 

Gubbeen Farmhouse Products also produce a Smoked Gubbeen.
