St Tola Crottin is a goat's cheese made by Siobhán Ní Gháirbhit and her team at Inagh Farmhouse cheese n Co Clare, on the West Atlantic coast of Ireland. The cheese is named after the local patron saint, St Tola. It is available 120g in raw or pasteurized milk versions.
This round of fresh goat's cheese is made with fresh curds with a light sprinkling of sea salt. It is smooth, light with clean lemony flavours and sweet and floral undertones that develop depth as the cheese ages. It is a great addition to a variety of recipes but also works well on a cheeseboard.
