When it is fresh, St Tola is rolled in traditional food grade ash, which allows slowing down the maturation of the cheese. After a few weeks, a full flavoured cheese with an elegant, smooth texture is ready for the market.

St Tola Ash Log has won many awards including 2014 gold at Irish Cheese Awards, 1st Class at Premio Roma 2013 & 2014 and 2014 supreme champion at Irish Cheese Awards.
