Calenzana (Calinzanincu)
Calenzana (Calinzanincu) is a washed-rind cheese from the Calenzana area, Corsica, France. This soft cheese is made from unpasteurized sheep or goat milk. It has uncooked pâté with a strong taste and rich aroma. Calenzana is aged for at least three months. Calinzanincu goes well with fig jam and figs.
