Selles sur Cher
Selles-sur-Cher is an unpasteurized goat's milk cheese from Loire Valley, France. It was made for the first time in the 19th century and is named after the commune of Selles-sur-Cher in the Loir-et-Cher.
The cheese is coated with vegetable ash and salt and kept for maturation in caves. The matured cheese is slightly salty, and its mould is often eaten along with the cheese, which has a comparatively stronger flavour.
