The name Ricotta is derived from the Italian word recocta that means “recooked”. It is fresh, unripened cow’s milk cheese that has a thick texture with high moisture content. The cheese has a creamy mild flavour and a short shelf life. Ricotta differs from cottage cheese, as it is made from whey to which a small proportion of either whole or skimmed milk is added.
