Produced by Romaniae Terrae, Pecorino Gelsomino is an Italian cheese made with highly selected sheep's milk pasteurized at optimum temperature. It is a milky coloured, crumbly cheese that flakes slightly when cut. The cheese is covered with jasmine flowers and then left to mature in virgin beech crates for over 90 days. This gives it a creamy consistency with a slight floral aroma of jasmine flowers.
