Taleggio DOP is the world's oldest soft cheese, having been created in the 9th century in Bergamo, located in the Val Taleggio region of northern Lombardy. During the cheese-making process, acidic milk is brought to the laboratory and then placed on wooden shelves in chambers and caves, following tradition. To prevent mould infestation, the cheese is washed once a week, which gives it its pungent aroma. Its creamy taste is more reminiscent of Gorgonzola Dolce, being mild and sweet.
