Paglierino meaning 'straw' in Italian, is a sheep's milk cheese made by a Casa Madaio dairy farm in Cilento, Campania, Italy. The young cheese is aged for two to three months. During ripening the cheese develops straw coloured rind with sweet, complex aroma and compact, elastic texture. The flavours are mild, creamy underpinned by citrusy and grassy notes.
