Produced by Romaniae Terrae, Pecorino di Vigna is an Italian cheese made with highly selected sheep's milk, pasteurized at optimum temperature. It is covered with red grapevine leaves and then left to mature in virgin fir crates for over 90 days. This keeps the cheese soft and gives it an intense, fragrant scent. It is straw yellow, silky and persistent in the mouth with a slight aroma of herbs.
