Ricotta Salata

Ricotta Salata is a variety of Italian cheese made from sheep's milk whey.  The name "Ricotta Salata" translates to "salted ricotta" in English because the cheese is usually salted and left to age. Ricotta Salata is made from the whey leftover from the production of other cheeses, such as Pecorino Romano or Parmesan. The whey is heated and then re-cooked, resulting in the formation of curds, which are then pressed, salted, and aged. Ricotta Salata has a mild, slightly salty flavour and the firm texture makes it suitable for grating or crumbling over salads and pasta dishes.
