Caprotto is a hard cheese made from goat's milk by Casa Madaio dairy farm in Cilento, Campania, Italy. This compact, delicate flavoured cheese is made using animal rennet, salt and cooked curd cheese technique.

It is aged for 3 to 12 months in the caves of Casa Madio. Depending up on aging period, the paste changes its colour from white to amber. Caprotto has a very strong aroma of roasted hazelnuts with flowery notes. The cheese pairs well with Greco di Tufo wine from Campania, Italy.
