Pecorino Ginepro is an Italian cheese made using pasteurized sheep's milk at optimum temperature. It is bathed in balsamic vinegar and juniper berries and, then left for maturation in oak barrels. The unique maturation process gives the cheese a dark reddish-brown rind with bone-white paste that is grainy and flaky. The full-flavoured cheese has a fruity, woodsy aroma and hints of juniper.
