Hillis Peak is a washed rind semi-soft cheese made from raw goat's milk by Pholia Farm Creamery and Dairy. It is aged for 6-8 months during which its natural rind is rubbed with olive oil and smoked Spanish paprika.
The texture of the cheese is semi-soft, smooth, dense, and supple with irregular holes or eyes. It has an ivory paste with flavours of earth, cellar and grass, balanced by a gentle clean, lactic tang. This cheese is suitable for vegetarians as it uses vegetarian rennet. It is named after a mountain that overlooks the farm to the east.
