Little Bloom on the Prairie is a mould-ripened goat's milk cheese from Prairie Fruits Farm, owned by Leslie Cooperband and Wes Jarrell in Champagn, Southern Illinois. It is a cut-curd, camembert-style cheese with a white, flossy gooey rind and dense, creamy bone-white interior. The cheese is aged for 3-4 weeks. The rind tastes mushroomy while paste offers a slightly tangy yet creamy mouth feel.
It pairs well with tart berry preserves and honey.
