The process of making PepBert is similar to MouCo's flagship cheese, Camembert. The cheese is aged between 7 to 8 weeks; during ageing, green peppercorns are added which give a spicy flavour. A young PepBert has a firm and creamy texture with a tangy, citrusy taste. A fully matured cheese has a buttery, creamy texture with a peppery flavour. The cheese pairs well with Merlot.
