Red Hawk is a washed-rind, triple-cream cheese made with fresh organic cow's milk, produced by Cowgirl Creamery, based in Marin County, California, United States. The cheese is made using organic pasteurised milk, organic cream and microbial rennet. During ageing, the cheese is washed with a brine solution that develops a red-orange rind which gives the cheese its name. Red Hawk cheese is rich in taste, with meaty flavour and notes of cured meats and roasted peanuts.
