Named after a nearby Franciscan monastery, Mont St. Francis is a semi-hard, raw goat's milk cheese developed on the lines of monastic style of Belgium and France. When young, this hearty, stinky cheese has a fairly firm and somewhat brittle texture that softens and becomes supple with age. With its intense, beefy, earthy flavours and pungent reddish, washed rind, Mont St. Francis is definitely not for the faint hearted!
Because of its extreme flavour profiles, Mont St. Francis pairs well with bourbon or fruity, fortified wines, bitter beers and sweet condiments.
