Snowdrop produced by Haystack Mountain Goat Dairy is a surface-ripened, bloomy rind cheese made from pasteurized goat's milk. It has a thin rind beneath which the paste ranges from oozy and satiny to creamy, depending upon the ripeness of the cheese.
When young, Snowdrop has a firm texture with a clean, tangy flavour. As it ripens (optimum is at 5 weeks), the paste grows creamy, satiny and oozy that's indulgent on the palate. Serve the cheese with a baguette or crackers or as a part of a cheese plate. It also tastes delicious with fresh fruit, dried fruit and preserves.
