Bloomsdale is a mould-ripened goat's cheese inspired by one of the classic French cheeses, Valençay. The cheese is named after the area where the producer, Baetje Farms, resides in the United States. It has won many awards, including the 1st position at American Cheese Society 2012, Super gold award at the 2014 World Cheese Awards. It has been judged as one of the world's 62 best cheeses.
Valençay cheese used to have the shape of a perfect pyramid with a pointed top. But when Napoleon returned to the castle of Valencay after his unsuccessful expedition in Egypt, he saw the cheese, in a fit of rage drew his sword and cut off the top of the cheese. Since then the cheese has always been made with a flattened top.
Bloomsdale is rolled in a mixture of pine ash and salt and aged until it forms a beautiful bloom of white mould. As it ages, the cheese starts becoming runnier just below the rind. The flavours will intensify, developing some blue cheese notes though it is not one. The rind extends an earthy taste to the lactic, tangy paste inside.
